An unmatched delicacy of Kerala, Vattayappam is a sweet steamed cake favorite among the Christians of Kerala. It is one of the variations of appam recipe.Thick steamed pancakes are made from fermented parboiled rice and coconut paste batter. Vattayappams are soft and puffy delicacies usually taken without any accompaniments, but they go well with a spicy curry or stew. On feast days such as Easter and Christmas, as well as marriages, Christians enjoy the round spongy vattayappams with traditional chicken or mutton stew.
