Sorpotel




Sorpotel is unarguably the essence of Goan Christian cuisine. This dish traditionally combines pork, liver, heart and kidney, all of which are diced and cooked in a thick and very spicy sauce flavored with feni. Like balchao, it keeps for several days, and is actually considered to taste better on the next day and even better after three days or more.
