Shah Jahani Biryani

Shah Jahani Biryani is a Mughal dish traditionally cooked with rice, meat and vegetables. For this dish, partially cooked rice and meat are layered in a pot with various flavors such as saffron, ghee, onions, chillies and mint. Then the whole is steamed in the oven to release their complex and complementary flavors. It is then garnished with nuts and raisins. This biryani is traditionally served with Baingan Bharta (spicy brinjals).
