One of the crown dishes of Gujarati Cuisine, Handwa is a spicy preparation made with fermented lentil batter and mixed with vegetables, spices and liberal amounts of sesame seeds. The flavor of sesame seeds dominates this delicious dish. In the olden days, the whole mix of this dish was baked in the earth. Today, the modern house-wives of Gujarat bake this recipe in a Handwa vessel which is available in the markets. This dish is served with crispy-crusted, chewy bread.
