Gundruk and Sinki

Gundruk and Sinki are vegetarian food items of Sikkim. These are fermented vegetable products prepared during winter, when fresh perishable vegetables are available in plenty.

Gundruk is a fermented product of leafy vegetables such as leaves of mustard, radish and cauliflower. Sinki is prepared from radish tap root only. Gundruk and Sinki are good appetizers due to the high content of lactic and acetic acid developed during fermentation.
