Chal Kopi

A simple rice and vegetable combination of the Bengalis, Chal Kopi is easy to cook. The soaked rice is added to the sauteed half cooked cauliflower florets and potatoes. Cumin, curry powders and spices contribute to the spicy flavor of this dish. Raisins and cashew nuts add to its richness. Sugar is added after the rice is cooked and sprinkled with powdered spices.
