Caldo is a soup of feasts traditionally made from a soup of kale-like cabbage thickened with loads of potatoes. This soup can be made of chicken, milk, corn flour, cheddar cheese, salt and pepper to taste. No Goan wedding buffet or an important celebration is complete without this classic Portuguese soup.
