Bajra Roti is the main dish of Rajasthan. It is made from bajra (millet), the major food crop of Rajasthan. This is a very easy recipe. These rotis are made from the dough of bajra flour, salt, water, and ghee. The authentic way to prepare bajra rotis are cooked over 'kanda' (cow dung cakes). Bajra Roti accompanied with lasun ki chutney (a recipe of hot garlic paste and spring onions) and onions is the staple diet of the Rajasthanis.
