Pistachio Barfi

Pistachio Barfi is one of the most well known desserts in India made from unhomogenized, unpasteurized whole milk and unsalted pistachio. This is a delightful example of a traditional Indian milk sweet, where boiling, sweetened milk is reduced gradually until it thickens to a fudge-like paste. Finely sliced and chopped pistachio nuts, sugar and thickened milk are blended together to create this mouth-watering dessert.
