Kulfi




Kulfi is an Indian dessert, similar to ice cream, enjoyed throughout India. This sweet, aromatic ice cream made from cream, milk, and sugar is garnished with lots of roasted, ground pistachio nut and saffron. It has a soft, creamy texture. Traditionally, it is made in little earthenware, terracotta cones, with earthenware lids. Traditional kulfi flavors vary greatly and include cardamom, saffron, pistachio, almond and mango. It is frozen in a metal cone set in ice and salt, unmoulded onto a plate and served with rose flavored syrup drizzled over it and bits of corn flour jelly pressed through a mould. The mango kulfi, pistachio kulfi, and the malai kulfi are the most popular versions of kulfi.
