Upperi are the traditional homemade Kerala snacks made for special occasions. These are prepared from raw bananas, yam, jack fruit and bitter gourd. Finely chopped vegetables tempered with turmeric are fried in hot coconut oil to a crisp condition. The most common among these crispy, salty and deep fried thin slices are banana chips and Sarkara Upperi. These are served in functions and feasts, especially during Onasadya.
