Hyderabadi Cuisine



The culinary history of Hyderabad dates back 400 years. This cuisine descended directly from the kitchens of the Nizams or the Muslim rulers. The word Nawabi is synonymous with Hyderabadi cuisine. Like Hyderabad's culture, art, music and poetry, Hyderabadi Cuisine stood high and unmatched by any other state in India. The authentic recipes, probably served 400 years ago, still survive in the kitchens of Hyderabad. The cuisine ranges from sour and the sweet, the hot and the salty to dishes studded with dry fruits and nuts. One of India's finest foods, the biryani is the jewel of Hyderabadi cooking. Hyderabad is synonymous with Hyderabadi Irani Tea, locally called Hyderabad Chai. Their mouth watering kababs and chicken are also famous throughout the country. The cuisine is primarily non-vegetarian, vegetarian delicacies like khatti arvi ka saala, aloo gobi, methi ka tuk and bharrey baghare tamate are unique to the city. Tasting the Hyderabadi cuisine is an exquisite experience.
