Vegetable Pancake has its associations with the festival of
Rakhi as it is traditionally made then.
Vegetable Pancakes are made from a mixture of chick pea flour, white flour, cornflour, rice flour, baking powder, finely cut potatoes, carrot, spring onions and onions mixed with the required salt, turmeric, red chilly powder, cumin powder and lemon juice. The dough shaped in 2 inch rounds is shallow fried till deep yellow on both sides. Pancakes taste good with green chutney or tomato ketchup.
