Salvia

Sage (Salvia officinalis) is an evergreen shrub of the Mint family (labiatae). It is characterized by purplish-blue flowers and stalked slender leaves with grayish-green color and rough texture. This famous culinary herb has medicinal importance.

Sage is a little sour and astringent in taste, and possesses a spicy aroma and a strong fragrance. A volatile oil, resin, tannin and a bitter principle are isolated from this herb. It is used as a tonic and astringent. A tea prepared from the leaves is given in the treatment of stress, infections, graying hair and sore throat. Fresh leaves are added to salads and sandwiches. The oil is used in perfumes as a deodorant.
