Rye




Rye is the only cereal capable of producing a leavened flour product which yields dark, heavy bread. It belongs to the grass family of the genus Secale. Rye is adaptable to widely varying climatic conditions. It is used in the production of alcohol for rye whisky, crackers and cereals, and is also used as animal feed.
