Parsley




Parsley (Botanical name, Petroselinum crispum) is a dried, aromatic leaf of a low growing biennial herb found in moist, clay loam soil. It has dense foliage and white flowers, which are finely divided and curled. The flowers and bear seeds contain essential oils. The leaves may be cut 2 to 3 times before the plant starts flowering.

Parsley consists of vitamins A, B and C and many other nutrients. It is used as a digestive and aphrodisiac. It is given in genito-urinary infections, high blood pressure, eye diseases and menstrual disorders. Parsley is also mixed with soups, salads and seafood.

In India it grows better at higher altitudes. It is locally known as Ajmood and Seema malli.
