Hathichuk (Cynara scolymus), a native of cold humid Mediterranean countries, is a vegetable crop found throughout India. It is seen on hills and plains. Two varieties are cultivated, green globe and purple globe. The unripe flowers are eaten as vegetable. The crop grows well in medium and light soils. Propagation is achieved through seeds, suckers or offshoots.
Hathichuk has two sweet principles, cynarin and chlorogenic acid. These ingredients are used for making water taste sweet. Cynarin is also used as choleretic.
