Jaggery




Jaggery, the coarse brown Indian sugar, is a pure, wholesome, traditional, unrefined whole sugar. It is enriched with the natural goodness of minerals and vitamins. It is made either from the sap of various palm trees or from sugar-cane juice. Jaggery comes in several forms, the two most popular ones being the soft, honey butter textured one and the solid cake-like form.

The solid version of jaggery serves to make candies and the soft textured one is used with breads and confections. Jaggery is often called the 'medicinal sugar' and is very rich in iron. Jaggery is known by the name Panela in Mexico and South America.
